Recipe | Lemon Drop Cupcakes

I saw an inspiration recipe, used my own directions since I was out of ingredients (and lazy). They turned out just fine.

Lemon Drop Cupcakes

  • 1 box lemon cake mix
  • 1 pkg (3.4 oz) instant vanilla pudding mix
  • 4 eggs
  • 1.25 c sour cream
  • 1/2 c milk

Glaze

  • 2.5 c powdered sugar
  • 1 t grated lemon zest (I just used the zest from one lemon)
  • 1 T unsalted butter, melted
  • 1/8 c lemon juice
  • 1/4 c hot water

Combine cupcake ingredients and bake according to package directions. Let cool for 15 min, then top with glaze. Cool completely before serving.
