Recipe | Smoked Salmon

This is amazing. The next time you have 6 hours to spare, get a batch going.

Smoked Salmon

  • 1/2 c Scotch whisky
  • Salmon fillets
  • 1 c brown sugar
  • 2 T coarsely cracked black peppercorns
  • 1 T kosher salt
  • 1 T grated orange or lemon rind

Soak salmon fillets in whisky for at least 1 hour. Drain off whisky, top fillets with sugar-spice mixture at let sit for 3-4 hours. Smoke at 200F for 1 hour or until fish flakes easily.
