Recipe | Chickpea Mint Salad

I don’t care if the cast of Friends ate this every day or not, but I do like this salad for prep cooking.

Chickpea Mint Salad

  • 1 c quinoa, uncooked
  • 1/2 c red onion, chopped
  • 1/2 c parsley, chopped
  • 1/3 c mint, chopped
  • 1/2 c chickpeas, rinsed
  • 1/3 c pistachios, unshelled
  • 1/2 c cucumber, chopped
  • 1/2 c crumbled feta cheese
  • Olive oil, lemon and sea salt and pepper to taste

Cook quinoa according to instructions and set aside to cool. Once quinoa is cooled, add all of the ingredients to a large bowl and mix well. Drizzle with olive oil, lemon and add salt and pepper to taste.
