Recipe | Smoked Salmon Pasta

Smoked Salmon Pasta

  • 8 oz quick cook-in-bag pasta
  • 1 c cooked peas
  • 1/2 c mayonnaise
  • 2 T chopped green onions
  • 2 T lemon juice
  • 2 t minced garlic
  • 1/2 t salt
  • 1/2 t ground pepper
  • 2 c baby arugula
  • 6 oz smoked salmon, torn into 1-inch pieces

Cook pasta according to package directions. Whisk mayonnaise, green onions, lemon juice, tarragon, garlic, salt and pepper in a large bowl. Add the pasta and peas, arugula and smoked salmon; stir gently until well combined.
