Recipe | Mexican Potato Salad

This couldn’t be simpler and it’s oh-so-delicious!

Mexican Potato Salad

  • 1 can diced cooked potatoes, drained
  • 1/3 c. Trader Joe’s frozen Mexican corn, cooked according to package instructions
  • 1.5 T mayonnaise
  • 1/4 c. diced green onions
  • Chipotle chile powder, to taste
  • Cracked pepper and sea salt, to taste

Combine the first four ingredients. Add spices to taste.

It’s especially delicious for a Tex-Mex version of a sandwich supper when served alongside tacquitos covered with salsa verde!
