2.5 c oats
1 egg
1/2 c fresh mint, chopped
1/2 c fresh parsley, chopped
1/4 c water
2 T melted coconut oil

Preheat oven to 350F. Puree oats in a food processor until flour-like fine. In a large bowl, mix together oats, egg, water, coconut oil, parsley and mint until it is dough consistency. Use a rolling pin to roll the dough flat. Use a small cookie cutter to cut into treat-sized shapes. Place shapes on a parchment paper-covered baking sheet and bake for 40 minutes or until crispy. Let cool before serving and store extras in an air-tight container.
