Recipe | Greek Style Lunch Wrap

This recipe is perfect when you have bits and bobs to use up. A dab of hummus, a smidge of kalamata olives, some leftover rotisserie chicken or Greenberg turkey and you’ve got a quick lunch done.

  • 1/2 c grape tomatoes, halved
  • 3 T plain hummus
  • 1.5 T pitted kalamata olives, coarsely chopped
  • 1 T crumbled queso fresco
  • 1/2 T lemon juice
  • 1/2 T olive oil
  • 1/2 c shredded rotisserie chicken or chopped turkey
  • 1 small cucumbers, chopped
  • 2 (8-inch) tortillas or lavash

Place tomatoes, olives, queso fresco, juice, oil, chicken, and cucumber in a large bowl; toss to combine. Spread hummus over 1 side of each tortilla. Top each tortilla with about 1/2 chicken mixture. Roll up wraps; cut in half.
