Recipe | Bierocks (A Kansas Tradition)

I grew up eating bierocks and somehow had never made them for Kelly until a member of his men’s class mentioned he loved bierocks. I made some for him and for Kelly, too. Now they’re a thing.

Bierocks

I make these by rote, but this is a pretty good how-to:

  • 1/2 lb ground beef
  • 1/2 t salt
  • 1/2 t pepper
  • 1/2 onion, chopped
  • 3 c shredded cabbage
  • Tabasco to taste
  • 20 Rhodes rolls, thawed
  • Butter

Cook beef, salt and pepper to taste. Add onion and cabbage; cook until vegetables are tender. Season with Tabasco (I use around 1 T). Flatten rolls into 3″ circles. Place 2-3 T beef and vegetable mixture in center of roll. Pinch to close dough around filling. Let rise for an hour or so. Smear top with a little softened butter and bake at 350F for 25 min or until golden brown.

PS – these freeze really well and taste delicious dipped in a variety of hot sauces!
