Winner, Winner, Chicken Dinner

Quick non-post note: Blogger rolled out a new back end editing system, which reset some of my presets. I’ve corrected the problem with the commenting function, so feel free to post thoughts again!

Now, on to the point of this post: A quick and easy spring/summer chicken dinner.

Chicken and Green Bean Salad
  • 1.5 c trimmed green beans, cut in half
  • 3 T. extra-virgin olive oil
  • 1.5 T. lemon juice
  • 1.5 T. whole-grain Dijon mustard
  • 1/4 t. kosher salt
  • 1/4 t. freshly ground black pepper
  • 2 c. shredded rotisserie chicken (remove skin and bones)
  • 1 c. cherry tomatoes

Steam green beans 3 minutes until crisp-tender. Drain and rise with cold water; drain. Combine oil and next 5 ingredients (through pepper) in a medium bowl, stirring with a whisk. Add chicken, beans and tomatoes; toss to combine. Serve with a toasted baguette.

Even better – each serving is only 286 calories!!
