Recipe | Asian Salmon with Rice Noodles

This is an elegant yet easy dinner solution. The glaze really makes the salmon, and combined with the rice noodles…yum!

Asian Salmon with Rice Noodles

  • 2 T sesame oil
  • 3 T honey
  • 4 T soy sauce
  • 4 T rice vinegar
  • 2 T minced garlic
  • Pinch powdered ginger
  • 1-1/4 lbs salmon
  • 8 oz thin rice noodles
  • Drizzle olive oil

Combine sesame oil, honey, soy sauce, rice vinegar, garlic, a pinch of ginger and whisk to blend. Place salmon in a baking dish, skin-side down. Pour the marinade over the salmon, cover and refrigerate for at least 1 hour. Bake salmon uncovered for 15 minutes at 350F in the same baking dish in which you marinated it. Remove salmon from  oven, pour marinade from baking dish into a small saucepan. Preheat broiler. Slide the spatula under salmon to remove skin. Broil salmon (without marinade or skin) for about 5 minutes until it caramelizes.
While the salmon broils, reduce marinade by boiling it down. Prepare rice noodles according to package instructions. To serve, put salmon on rice noodles and drizzle with marinade.
