Recipe | Tuna and Arugula Salad

Seriously one of my favorite pins on Pinterest details how to make five healthy lunches from a $25 shopping trip at Trader Joe’s. (Major love affair with this store, y’all.)

Here’s one of the five meals – it’s tasty!

Tuna and Arugula Salad

  • 1 bag organic arugula
  • 1 bag shredded carrots
  • 1 red onion
  • 1 jar organic pitted Kalamata olives
  • 1 can Trader Joe’s Skipjack Tuna in Water

Rinse about a third of the arugula leaves. Drain the  tuna and cut about a third of the red onion into thin slices. Toss the tuna, red onion, about a third of the shredded carrot, and half of the Kalamata olives together with the arugula and drizzle with olive oil, lemon juice, salt, and pepper. (PS this serves 2 hungry people!)
