Recipe: Quick and Easy Korean Tacos

Fast and easy – plus different. This is my kind of dinner.

On a side note, we just did a personality/style assessment at work and apparently my style likes “variety.” Big shock…not!)

 

Quick and Easy Korean Tacos

Idea based on this post and this post

  • Soft taco-sized tortillas
  • Avocado
  • Kimchee
  • Ground beef
  • 1/4 c brown sugar, packed
  • 1/4 c soy sauce
  • 2 t sesame oil
  • 1/2 t crushed red-pepper flakes
  • 1/4 t ground ginger
  • 1 T vegetable oil
  • 3 cloves garlic, minced

In a small bowl, combine brown sugar, soy sauce, sesame oil, red pepper flakes and ginger. Heat vegetable oil in a large skillet over medium high heat. Add garlic and cook about 1 minute. Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat. Stir in soy sauce mixture and simmer  about 2 minutes. Serve on tortillas with kimchee and sliced avocado.
