Recipe: Pasta Carbonara

 I was late getting home, so I needed a recipe for dinner that used what I had on-hand and could be ready in less than 15 minutes.
 
My solution?
 
Pasta Carbonara with Peas
  • 12 oz pasta (whatever type you like)
  • 1/3 c bacon pieces (as a time-saver I use Hormel’s real Bacon Pieces)
  • 1/2 medium onion, diced small
  • 1 t crushed garlic
  • 3 eggs
  • 3/4 c grated Parmesan
  • 3/4 c half-and-half
  • Salt
  • Freshly ground black pepper
  • 1/2 c peas
Cook pasta according to package directions. While the pasta is cooking, saute onions and garlic in a little amount of olive oil. Cook until golden brown. Add bacon pieces. In a bowl, mix together eggs, Parmesan, half and half, salt and pepper until smooth. When the pasta is done, reserve a cup or two of the pasta water. Drain the pasta and place it in a bowl. While the pasta is still hot, slowly drizzle in the egg mixture, stirring the pasta the whole time. The sauce will become thick and should coat the pasta. Halfway through adding the egg mixture, add the peas, bacon, onion and garlic. Finish adding the egg mixture, stirring until it’s all combined. Splash in a little hot pasta water if needed for consistency. Top with additional shredded Parmesan if you’d like.
