This couldn’t be simpler and it’s oh-so-delicious!
Mexican Potato Salad
- 1 can diced cooked potatoes, drained
- 1/3 c. Trader Joe’s frozen Mexican corn, cooked according to package instructions
- 1.5 T mayonnaise
- 1/4 c. diced green onions
- Chipotle chile powder, to taste
- Cracked pepper and sea salt, to taste
Combine the first four ingredients. Add spices to taste.
It’s especially delicious for a Tex-Mex version of a sandwich supper when served alongside tacquitos covered with salsa verde!
