I don’t like blueberry pie – it’s too sweet. But add mild pear and it’s HEAVENLY.
Blueberry Pear Pie
Inspired by this recipe
- Two pie crusts (use my recipe here)
- 3 ripe pears, peeled, cored, thinly sliced (about 3 cups)
- 2.5 c fresh blueberries
- 1 T lemon juice
- 1/2 c sugar
- 3 T cornstarch
Make pie crusts. Place 1 crust in 9″ glass pie plate. Meanwhile, gently toss filling ingredients in large bowl. Spoon filling into pastry-lined pie plate. Top with remaining crust. Preheat oven to 425F. Place pie on foil lined baking sheet and put in preheated oven. Bake at 425F for 35-40 min or until golden brown and bubbly. Allow to cool before serving.
