Recipe | Blueberry Pear Pie

I don’t like blueberry pie – it’s too sweet. But add mild pear and it’s HEAVENLY.

Blueberry Pear Pie

Inspired by this recipe

  • Two pie crusts (use my recipe here)
  • 3 ripe pears, peeled, cored, thinly sliced (about 3 cups)
  • 2.5 c fresh blueberries
  • 1 T lemon juice
  • 1/2 c sugar
  • 3 T cornstarch

Make pie crusts. Place 1 crust in 9″ glass pie plate. Meanwhile, gently toss filling ingredients in large bowl. Spoon filling into pastry-lined pie plate. Top with remaining crust. Preheat oven to 425F. Place pie on foil lined baking sheet and put in preheated oven. Bake at 425F for 35-40 min or until golden brown and bubbly. Allow to cool before serving.
