Recipe | Savory Corn Pancakes

I made these as part of a dinner combo and Kelly loved the pancakes so much he asked me to keep them in the freezer for future brunches.

Savory Corn Pancakes

Found in an old Sandra Lee cookbook

  • 1 15-oz can cream-style corn
  • 1 pkg corn muffin mix
  • 1/4 c. milk
  • 1 egg, lightly beaten
  • 2 T. butter, melted
  • 1 green onion (green part only), finely chopped
  • 1 t. chili powder
  • Olive oil

Combine all ingredients. Cook on lightly oiled skillet or griddle until golden.
