Individual Cheesecake

- 1 block (8 oz) cream cheese, softened
- 1/2 c sugar
- 3 T lemon or lime curd
- 6 mini graham cracker crusts
In a medium mixing bowl, beat the cream cheese and sugar until creamy. Beat in the lime curd until just combined. Spoon the mixture into the graham cracker crusts. Refrigerate several hours or freeze for 10 minutes before serving.
