This was a simple but delicious recipe. Definitely one to put in regular rotation.
Mexican Pasta Salad
Discovered and adapted from here
- 1/2 ripe avocado
- 1/4 c mayonnaise
- 2 T lime juice
- 1 T grated garlic
- 1/2 t salt
- 1/4 t cumin
- 1 packet ready pasta – rotini or fusilli
- 1 c grape or cherry tomatoes
- 1 can red or black beans, rinsed
- 1/2 c corn, fresh or frozen
- 1/4 c red onion, chopped
- 1 c grilled chicken, chopped
Combine avocado, lime juice, salt, mayo cumin and garlic with a stick blender until smooth. Combine all remaining ingredients. Add avocado dressing and mix thoroughly.
