Our running group gave us a great cookbook at our end of season party: Run Fast. Cook Fast. Eat Slow.
Written by runners, it’s full of healthy, filling and quick to cook meals. We’re really enjoying trying the new things. The beet smoothie has proven to be a favorite, even on cold mornings.
Runner’s Beet Smoothie
- 1 small cooked beet
- 1 c frozen blueberries
- 1 frozen banana
- 1 c unsweetened almond milk
- 1 c water
- 2 T unsweetened cocoa powder
- 1 heaping T peanut butter
Using stick blender (or your favorite tool), combine everything together. Serves two.
