We take turns bringing breakfast to Bible study at church. This is super-easy and a crowd-pleaser.

Easy Migas

Inspired by this recipe

  • 4 c tortilla chips, slightly broken
  • 8 eggs
  • 1/4 c water
  • 1/2 can black beans
  • 1 can Mexican-style tomatoes, undrained

Whip eggs and water together. Stir in tomatoes. Cook until soft-set. Stir in chips and black beans. Cook until firm-set. Serve with salsa and cheese.
