This was easy and tasty – making it a perfect dish to make in stages to eat when you have a busy day.
Roasted Chickpea Wraps
Based on this recipe
- 1 15 oz can chickpeas
- 1 T olive oil
- 1 T paprika
- 1 t ground black pepper
- 1/2 t cayenne pepper
- 1/4 t salt
- 4 whole wheat tortillas
- 1 c tzatziki use my recipe
- 1/4 red onion, cut into strips
- 2 lettuce leaves, chopped
Preheat oven to 400F. Pat chickpeas dry with paper towel, removing any skins that may come off. Toss chickpeas with oil, paprika, black pepper, cayenne pepper and salt. Spread chickpeas onto a parchment lined baking sheet and roast for about 20 minutes, until lightly browned but not hard. Spread some tzatziki in middle of tortilla, then add chickpeas and veggies.
