The original recipe said to use chorizo. I’m sure it would be wonderful that way, too, but we have no regrets from using a link of Fischer’s taco jalapeno sausage instead.
Sausage Nachos

- 1/2 can (15oz) pinto beans, rinsed and drained
- 4 oz cheddar cheese
- 1/4 c. tomatillo salsa
- 1 link taco jalapeno sausage, sliced and diced
- 2 c tortilla chips
- Pico
Top tortilla chips with salsa, then beans, sausage and cheese. Bake at 350F for 10 min, then broil until chips are slightly browned. Top with pico.
