Smoked Salmon

- 1/2 c Scotch whisky
- Salmon fillets
- 1 c brown sugar
- 2 T coarsely cracked black peppercorns
- 1 T kosher salt
- 1 T grated orange or lemon rind
Soak salmon fillets in whisky for at least 1 hour. Drain off whisky, top fillets with sugar-spice mixture at let sit for 3-4 hours. Smoke at 200F for 1 hour or until fish flakes easily.
