Thank goodness for the crock pot. The secret to all-day chili, pot roast, queso dip, and…baked potatoes.
Yes, baked potatoes.
Maybe I should have started this post by saying, “Thank goodness for the crock pot and for Pinterest.” After all, Pinterest is where I discovered that you can make baked potatoes in your crock pot.
It seems silly to give instructions – it’s that easy. Just wash your potatoes, let dry, wrap in foil and cook on low in the crock pot for 8 hours. No pricking with a fork. No heating the oven. Just wash, dry, wrap and forget for 8 hours.
And can I just say that it’s very amazing to come home from work on a HOT day, when you most certainly don’t want to heat the oven (and thus the house) nor spend the time required, to piping hot, fully cooked baked potatoes?
Very.Amazing.
But not quite as amazing as they are when you stuff them with a bit of cheese and shrimp sauteed in buffalo sauce.
That’s just extra special.
[…] Maybe not a quick meal, but it goes together quickly if you bake the potatoes over the weekend or cook them the day of using the crockpot. […]
