I never knew what to do with delicata squash, until I found this recipe.
Delicata Squash with Eggs

- 1 delicata squash
- Coconut oil
- Salt and pepper
- Eggs
Preheat the oven to 400F. Slice delicata squash in 3/4 – 1″ thick rounds. Scoop out seeds and brush rounds with oil. Season with salt and pepper. Lay rounds flat on parchment lined baking sheet and bake for 20 minutes. Remove from the oven, flip and bake for another 10 minutes. Remove squash from the oven and crack egg in each one. Return to oven for 8-10 minutes, depending on how cooked you want your yolks. Remove from the oven and cut away any egg that spilled underneath.
