This recipe is super-easy and delicious. Winner all around!
Christmas Jam
- Found in a North Dakota gas station, replica recipe found here
- 3 c frozen strawberries
- 3 c fresh or frozen cranberries
- 1 T vanilla bean paste
- 1/4 t ground cinnamon
- 1/8 t ground nutmeg
- 1/4 c lemon juice (bottled not fresh)
- 1 T unsalted butter (optional)
- 2 to 2.5 c granulated sugar
Pulse strawberries and cranberries with a hand blender until chunky. Place crushed fruit in large saucepan. Stir in vanilla, ground cinnamon, nutmeg and lemon juice. (Optional: Add butter to the top of the jam. This will help minimize formation of foam.) Bring mixture to a full rolling boil over high heat, stirring constantly. Add sugar and stir to dissolve. Return mixture to a boil. Continue to boil for one minute, stirring constantly. Remove pan from heat. Skim foam if any has accumulated.
Makes 32 oz.
Not shelf stable: Freeze for one year (thaw before serving) or refrigerate for one month.
