Inspired by Trader Joes, easy to modify with what you have available at home.
Potsticker Stir Fry

- 1 pkg potstickers
- Olive oil
- 3-4 bulbs baby bok choy
- 12 ounces broccoli slaw or shredded mixed cabbage
- 1/4 c. of your favorite sauce (premade or homemade – I like soy, sriracha and sweet chili sauce)
- Rice
Heat olive oil in skillet. Once warm, add frozen potstickers to skillet, allow to cook for 5 minutes or until golden brown. Add 2 tablespoons water, cover, and steam for 2 minutes, then remove from skillet. Roughly chop baby bok choy. Add additional olive oil to skillet. Add chopped bok choy and allow to cook until just brown. Add in slaw, a cup or so at a time, until just tender. Add potstickers back to skillet. Add sauce to skillet, stir-fry to combine, then serve over rice.
OMGeee! This looks delicious! (And, quick for a weeknight meal!)
