This is an easy seasonal switch up to standard yeasted waffles.
Pumpkin Waffles

- 1 c lukewarm milk
- 2 T sugar
- 1 envelope active dry yeast
- 1/2 c pumpkin
- 3 T melted butter (cooled)
- 1 t vanilla
- 2 eggs
- 1/2 t salt
- 1 1/2 c flour
- 1.5 t pumpkin pie spice
Combine warm milk with sugar and yeast, let sit for 10 minutes. In a large bowl, whisk pumpkin, melted butter, vanilla and eggs together. Add to milk mixture and whisk to combine. Add remaining ingredients and combine thoroughly. Cover with plastic wrap and place in fridge overnight. Preheat waffle iron. Stir batter before using. Cook waffles according to your waffle iron instructions.
