When you want an easy side or have an abundance of veggies, make pico!
Quick and Easy Pico
- 2 large tomatoes or 3 Roma tomatoes, diced
- 1 red onion or 1 Noonday onion
- 1 clove garlic, minced
- 1 bunch fresh cilantro, chopped
- 1 jalapeno (optional), chopped
- 1 cucumber (optional), chopped
- 1 t salt
- 1-2 t lime juice
Combine all vegetables together. Add lime juice and mix thoroughly. Add salt to taste. Refrigerate 15 minutes or overnight to maximize flavor.
