Tuna Nicoise
Vinaigrette recipe here
- 3/4 c extra-virgin olive oil
- 1/4 c fresh lemon juice
- 2 T Dijon mustard
- 1 t honey
- Fresh cracked black pepper, to taste
- Kosher salt, to taste
- Hard boiled eggs
- Boiled red potatoes
- Tuna, albacore packed in olive oil (drained)
- Capers
- Chopped tomatoes
- Chopped lettuce
- Kalamata olives
- Red onions
Mix olive oil, lemon juice, mustard, honey, pepper and salt. Let sit 20 minutes to overnight to allow flavors to blend. Layer salad, then top with vinaigrette to serve.
