Recipe | Overnight Yeasted Waffles

A running friend mentioned this recipe during a long run (yes, we talk about food ALL THE TIME while we run). It sounded simple enough, so I whipped up a batch and now we’ll never willingly eat box mix waffles again.

Overnight Yeasted Waffles

  • 1/2 c warm water
  • 1 packet yeast
  • 1/2 c melted butter
  • 2 c 2% milk
  • 1 t salt
  • 2 T sugar
  • 3 c flour
  • 2 large eggs, beaten
  • 1/2 t baking soda

Combine yeast and water in a large mixing bowl and let stand for a few minutes. Stir to dissolve yeast. Melt butter. Combine butter with milk, salt and sugar. Test with finger to make sure the mixture has cooled to lukewarm, then stir into dissolved yeast mixture. Add flour and stir until a thick loose dough is formed and there is no more visible flour. Cover bowl with plastic wrap and let it sit on the counter overnight. Batter will double or triple in bulk as it rises. Next morning, beat eggs and add to batter along with baking soda. Using a whisk, beat eggs and baking soda into the batter until completely combined. Cook in waffle maker (1 cup batter per waffle for 4:30-5 min for my waffle maker).
