The perfect biscuits are flaky, tall, tender and have just a bit of saltiness. These are those biscuits.
Perfect Southern Biscuits

- 1/2 c cold butter, cubed
- 2 c flour
- 3 t baking soda
- 1/2 t salt
- 3/4 c buttermilk
- Melted butter
Cut butter into flour until mixture resembles coarse crumbs. Stir in buttermilk until just moistened. Turn onto a lightly floured surface, knead 3-4 times. Pat to 3/4-inch thick rectangle. Cut into evenly sliced squares. Place on greased baking sheet. Bake at 425F until golden brown, 11-13 minutes. Brush tops with butter. (Makes 8)
