The only way you won’t like this is if you’re one of the poor unfortunate souls living in “cilantro tastes like soap” land. This uses up an entire bunch of cilantro (though I always double it because it’s just that good). Trust me – you’ll want to have a batch available in the fridge at all times. It’s great for fish, chicken, carne asada or just plain dipping.
Killer Cilantro Salsa

- 1/3 c olive oil
- 2-3 T lime juice
- 2 T chopped garlic
- 3/4 t fine sea salt
- 1 large bunch cilantro, washed well, including stems
Roughly chop cilantro, leaves and stems. Combine all ingredients and blend with your favorite tool – blender, hand blender or food processor – until smooth. Stop to push cilantro down into the blades as necessary.
