I don’t need to explain why I made this. I had all of the ingredients and I thought, why not? It was wonderful. I’ll make it again.
Trout with Fennel
- 4 T bacon bits
- 1 fennel bulb, cored and sliced
- 1 onion, sliced
- 1 t salt
- Pepper
- Olive oil
- 2 T cilantro, minced
- 4 4-oz trout fillets
Preheat oven to 400F. In skilled, warm 1 T olive oil over medium heat. Add fennel and onion. Sprinkle with salt and cook until browned (about 8-10 min). Transfer to a lightly greased baking dish, add pepper and stir in cilantro. Top with trout fillets and place in oven. Roast for 15 minutes or until opaque. Sprinkle with bacon bits and serve.
