Recipe | Strawberry Poke Cake

I haven’t had a poke cake in years. Making one reminded me that poke cakes are 1) wonderful and 2) easy to make.

Simple Poke Cake for Two

  • White box cake mix, divided in half
  • 3 oz strawberry jello
  • 1/8 c cold water
  • 1 c Cool Whip
  • Chopped pecans

Prepare cake mix. To make just half a cake mix, divide all ingredients in half. If the eggs are an uneven number, add one yolk only and save the white for another recipe. Pour into 8″ round pan and bake according to package directions. Remove cake from the oven and let cool on wire rack for 10 minutes. With the end of a wooden spoon, poke the cake several times. Place the strawberry jello in a measuring cup. Pour 1/4 c of boiling water onto jello and stir until completely dissolved. Stir in 1/4 c cold water. Slowly pour jello over cake. Refrigerate cake for 2 hours. To frost, spread Cool Whip over the cake. Sprinkle chopped pecans as garnish.
