Without coworkers in the office or church home group meeting in person, it’s really tough to make a cake these days. I don’t always want to buy a small cake (usually they aren’t good unless I go to a bakery and buy a proper pricier cake) and I don’t always want to eat cake for days.
Enter: How to make cake for two.
Frosted Cake for Two
First, make your cake. I used a cake mix – because why make from scratch? Cut the liquids in half, add half the mix (1 2/3 c equals half a box) and add half the eggs (a good solution is to add 1 egg and half a beaten egg if it calls for 3 eggs). Bake as directed on the box.
Second, make frosting. With my cake, I wanted chocolate frosting so I could also use up the last of some decorative sprinkles.
Chocolate Frosting
- 1/2 T unsalted butter, softened
- 2 T confectioner’s sugar
- 2 T unsweetened cocoa powder
- 4 to 6 t heavy cream
- 1/4 t vanilla extract
- Pinch salt
Beat all ingredients together until desired consistency.
