Recipe | Red Chicken Curry

Fast and curry-comforting (not spicy). By the way, the site where I found this recipe has several shortcut Trader Joe’s meals.

Red Chicken Curry

  • 1 can low-fast coconut cream
  • 1 bottle Trader Joe’s Thai red curry sauce
  • 2-3 boneless skinless chicken thighs, cubed
  • 1 bag frozen vegetable fried rice

Mix coconut cream, red curry sauce and cubed chicken thighs in a skillet. Simmer until chicken is cooked. Stir in rice and cook until warmed through (about 10 minutes).

PS – this would be great with 6 oz of baby spinach stirred in.
