I like to think of this as a deconstructed kebab.
Chicken Hummus Bowl

- 1 lb boneless skinless chicken thighs, cut into 1″ pieces
- 3 T. olive oil
- 1 t. cumin
- 1 t. paprika
- 1/4 t. salt
- 1 t. crushed garlic
- 2 T. lemon juice
- 2 c. hummus
- 1 cucumber, halved and sliced lengthwise
- 1 pint cherry tomatoes, halved
- 1/4 c. slivered red onion
- 1/4 c. chopped fresh parsley
Toss chicken with 1 tablespoon oil, cumin, paprika, cayenne and 1/8 teaspoon salt. Spread evenly on foil-lined pan. Broil until just cooked through, 5 to 7 minutes. Meanwhile, combine crushed garlic and remaining salt into a paste with a fork. Whisk in lemon juice and the remaining 2 tablespoons oil. Add the chicken and let stand for 5 minutes, stirring occasionally. Divide hummus among 4 plates. Top with chicken and any remaining dressing, cucumber, tomatoes, onion and parsley.
