This is an easy meal to prep and enjoy on busy days for lunch or dinner.
Farro and Tuna Salad
Adapted from here
- 2 c cooked farro
- 2 T lemon juice
- 1/4 c olive oil
- 1/2 t ground pepper
- 1/4 t Kosher salt
- 4 c chopped broccoli (frozen, then thawed)
- 2 5-oz tuna, drained and flaked
- 1 c. sliced pitted kalamata olives
Combine everything and serve.
