Recipe | Farro and Tuna Salad

This is an easy meal to prep and enjoy on busy days for lunch or dinner.

Farro and Tuna Salad

  • 2 c cooked farro
  • 2 T lemon juice
  • 1/4 c olive oil
  • 1/2 t ground pepper
  • 1/4 t Kosher salt
  • 4 c chopped broccoli (frozen, then thawed)
  • 2 5-oz tuna, drained and flaked
  • 1 c. sliced pitted kalamata olives

Combine everything and serve.
