Our blackberry bourbon jam was so good, we decided to try it with peaches. End result: WINNER WINNER WINNER
Peach Bourbon Jam
Adapted from our awesome recipe using blackberries
- 6-8 fresh peaches, skinned and chopped
- 3/4 c sugar
- 1/2 T lemon juice
- 1/4 c bourbon
- 1 T vanilla paste
In a large bowl, combine peaches, sugar, lemon juice, vanilla paste and bourbon and let sit for about 30 minutes or until the sugar and bourbon start to break the peaches down. Place mixture in a saucepan, bring to a boil over medium high heat, stirring occasionally. Reduce temperature to medium and simmer until mixture begins to thicken, about 15-20 minutes. Keep stirring, or mixture will stick. Once the mixture starts to thicken, remove from heat and let cool. Pour jam into jars. Jam will keep for approximately 2 weeks.
