Easy Texas Sheet Cake
- 1 box Devil Food’s Cake Mix
- 1 packet instant coffee, like Starbucks Via
- 3 c powdered sugar
- 1/2 c salted butter
- 1/3 c unsweetened cocoa powder
- 1/3 c milk
- 1 t vanilla extract
- 1 cup chopped pecans
Prepare cake according to box instructions, adding instant coffee to the batter. Pour into lightly greased 16×9 (jelly roll size) pan and bake at box-instructed temperature. The cake should be ready in 15-20 minutes, so monitor carefully. Remove cake from oven and let cool slightly before frosting but do not let it completely cool.
While cake is baking, melt butter in a medium-sized saucepan over low heat. Whisk in cocoa powder, then pour in milk. Increase heat to medium high and bring to a rolling boil, whisking constantly. Once mixture boils for a minute, remove from the heat and whisk in powdered sugar and vanilla until smooth. Pour over slightly warm cake, using spatula to spread frosting to cover. Sprinkle on chopped pecans. Cool completely before cutting and serving.
