Enjoying a glass of bourbon with a piece of pumpkin pie sparked a recipe idea: Bourbon Pumpkin Pie. So I made it and it was just as delicious as we thought it would be.
Bourbon Pumpkin Pie

- 3/4 c packed light brown sugar
- 2 t pumpkin pie spice
- 1/2 t salt
- 2 large eggs
- 1 can (15-ounces) pumpkin puree
- 1 can (12-ounces) evaporated milk
- 2 T bourbon
- 1 unbaked pie crust
Preheat oven to 425F. Whisk together sugar and spices in small bowl; set aside. In a large bowl, whisk together eggs and pumpkin until combined. Whisk in sugar-spice mixture until combined. Gradually stir in evaporated milk and bourbon until combined. Pour mixture into unbaked pie shell. Bake for 15 minutes. Reduce temperature to 350 F, and bake for an additional 40 to 50 minutes or until toothpick inserted near center comes out clean. Cool on wire rack for 2 hours before serving.
