I’ve been struggling with chicken in the smoker. It’s very easy to overcook.
Then I stumbled across this blog post and my problems were solved.
Smoked Chicken Breasts
- 4 chicken breasts, boneless and skinless
- Olive oil
- Seasoning to taste
- Hickory wood
Marinade chicken breasts 4 hours in olive oil and selected seasonings. Preheat smoker to 225F. Place chicken breasts on foil sheet and cook 1 hour, then turn over. Cook 1 more hour. If chicken’s internal temp isn’t 165F, put it in a 350F oven for 10-15 minutes.
