This is amazing. And relatively low-cal, too.
White Chocolate Coconut Cream Pie

- 2 pkgs (small) white chocolate pudding mix
- 8 oz lite frozen whipped topping, thawed
- 1.5 c skim milk
- 1.25 c shredded coconut
- Graham cracker pie shell
Combine pudding mix and milk until pudding is thick. Stir in half of the whipped topping and 1 c coconut. Poor into pie shell. Top with remaining whipped topping. Sprinkle with remaining coconut.
Next time I’m trying it with lemon pudding. Can you imagine?!?!
