A good rule of thumb is 13 minutes of cooking time for every pound of turkey if roasting empty, and 15 minute per pound if stuffed. I recommend roasting a bird without stuffing – make Kelly’s mama’s dressing instead.

Heat the oven to 450F to preheat. Drop the temperature to 350F when the turkey goes in the over.

Baste the turkey every 45 minutes. Remove the turkey from the oven, close the oven door to keep the oven temp consistent and baste the turkey all over. To baste, tilt the pan and use a turkey baster or spoon to scoop up the pan liquids and drizzle them on top of the turkey. During the last 45 minutes of cooking, baste the turkey with melted butter. This crisps up the skin and turns it a deep golden brown.

The turkey is done when it is 165F in the thickest part of the thigh. Rest the turkey for 30 minutes before carving.
