Recipe | Sesame Chicken Soba Noodles

So easy – particularly if you prep on a weekend and keep in the fridge for a weekday quick supper.

Sesame Chicken Soba Noodles

Inspired by this

  • 8 oz uncooked soba
  • 8 oz broccoli florets
  • 6 oz shredded chicken or turkey
  • 1/8 t salt
  • 1/4 t freshly ground black pepper
  • 2 T rice vinegar
  • 2 T dark sesame oil
  • 2 T soy sauce
  • 1 T creamy peanut butter
  • 1 t brown sugar
  • 1/4 t crushed red pepper
  • 1/2 t minced garlic

Add soba noodles to pot of boiling water; cook 3 minutes. Add broccoli; cook 3 minutes or until soba and broccoli are done. Drain. Combine vinegar, sesame oil, soy sauce, peanut butter, brown sugar, crushed red pepper, and garlic in a large bowl, stirring with a whisk. Stir in noodle mixture and meat.
