Arbol Pepper Salsa

- 1 oz arbol peppers
- 1/3 c of vegetable oil
- 1 large clove of garlic or 2 small ones
- Sea salt to taste
Use kitchen scissors to remove stems and seeds from peppers – wear gloves! Heat oil at medium heat in a large skillet. Add arbol peppers and lightly toast, stirring constantly to avoid burning them. Tilt skillet to separate the peppers from the oil. Place peppers on paper towels until completely cooled. Place in blender or food processor with the garlic. Add salt to taste. Process for a few seconds just to crush the peppers and place in a glass jar. Add some of the leftover oil to cover the mixture and it is ready to eat. The salsa flavor improves each day and lasts a long time in the fridge.
