Recipe | New Mexico Green Chile Queso

New Mexico Green Chile Queso

  • 1 32 oz box Velveeta, cubed
  • 1 10 oz Ro-Tel diced tomatoes & green chiles
  • 2 cans diced green chiles
  • 1/2 sweet onion, diced
  • 2 cloves garlic, minced
  • 1 heaping Tbsp. taco seasoning mix
  • 1/2 lb meatless “beef” crumbles
  • Hot sauce

Put contents of Ro-Tel and green chiles into saucepan, then add Velveeta cubes. Heat over low flame, stirring occasionally and allow the cheese to melt. In a separate skillet, sauté diced onions and minced garlic with a 1 t of olive oil over medium-high heat until onions are shiny and soft. Add the beef crumbles into onions and garlic, and warm through. Drain oil, add taco seasoning to the beef-onion mixture, and sauté for another minute. Spoon the beef-onion mixture into saucepan and incorporate. Add however much hot sauce to your liking. Serve immediately with chips.
