Vegan Lunch Bowl

- 1 can chickpeas, drained
- 1 T olive oil
- 2 t ground cumin
- 1 t paprika
- 1/2 t chili powder
- 1/2 t salt more to taste
- 1 cucumber, sliced thinly
- 16 cherry tomatoes, halved
- 1/2 c smoked corn
- 1 t capers
- 1/3 c couscous
- 1/8 c chopped red onion
Mix spices and salt together. Heat a heavy-bottomed pan on a medium-high heat. Pour olive oil in hot pan and wait for the oil to heat up. Don’t get it start to smoke. Add drained chickpeas to pan. Roast lightly, stirring regularly so they don’t burn. Sprinkle with spice mixture and stir until chickpeas are evenly coated in spices. Remove from heat. To build bowls, add all ingredients in layers. Top with drizzle of olive oil and lemon juice.
