While “chorizo” is in the name, these tostadas are plant-forward, with vegan meat substitute. They are also delicious.
Chorizo Tostadas

- 8 oz ground meat substitute
- 2 oz Mexican chorizo
- 3 c sliced yellow onion (about 1 large)
- 1 c sliced red bell pepper (about 1 medium)
- 1/2 t ground cumin
- 1/2 t chili powder
- 3/8 t kosher salt
- 4 tostada shells
- 1 ripe avocado, sliced
- 2 tablespoons fresh cilantro leaves
Cook chorizo and meat substitute 5 minutes or until browned, stirring to crumble. Remove meat mixture from pan with a slotted spoon (do not wipe out pan). Add onion, bell peppers, cumin, chili powder, and salt; cook 8 minutes or until tender. Return meat mixture to pan; cook 2 minutes. Spoon bell pepper mixture evenly over tostada shells. Top each evenly with avocado and cilantro.
