Recipe | Chorizo Tostadas

While “chorizo” is in the name, these tostadas are plant-forward, with vegan meat substitute. They are also delicious.

Chorizo Tostadas

  • 8 oz ground meat substitute
  • 2 oz Mexican chorizo
  • 3 c sliced yellow onion (about 1 large)
  • 1 c sliced red bell pepper (about 1 medium)
  • 1/2 t ground cumin
  • 1/2 t chili powder
  • 3/8 t kosher salt
  • 4 tostada shells
  • 1 ripe avocado, sliced
  • 2 tablespoons fresh cilantro leaves

Cook chorizo and meat substitute 5 minutes or until browned, stirring to crumble. Remove meat mixture from pan with a slotted spoon (do not wipe out pan). Add onion, bell peppers, cumin, chili powder, and salt; cook 8 minutes or until tender. Return meat mixture to pan; cook 2 minutes. Spoon bell pepper mixture evenly over tostada shells. Top each evenly with avocado and cilantro.
